Sunchokes, also known as Jerusalem artichokes, are a great source of prebiotic fiber, while artichokes are rich in antioxidants and have been shown to support liver health. Plus, both are root vegetables making them a versatile ingredient that can be roasted, mashed, sautéed, or pickled to add a flavorful twist many dishes.
